This is not the most beautiful cake to serve, but it sure is a delicious one. My mom always made this cake in the Fall when the seasons were changing and apples were everywhere.
My husband’s grandson just graduated from high school and he requested his favorite cake for his celebration. This is the one he chose!
If you happen to have any extra caramel sauce left over, it pairs perfectly with ice cream!
The ingredients are simple, but the flavor is spectacular.
Just run your peeled and cored apples through the food processor to grate them.
The apples make this cake so moist and delicious.
Cream your sugar, butter and eggs together, about 3 minutes on medium-high.
Add the flour, nutmeg, cinnamon, and baking soda in.
The dough is going to be a little stiff at this point. Now add in the shredded apples.
See how the batter is less stiff. Pour it into a greased 9×13 pan.
Spread the batter evenly into the pan. Bake in a pre-heated 325 degree oven for about 35-45 minutes, or until cake no longer jiggles and is set in the middle.
While the cake is baking, let’s make this delicious caramel sauce.
Add your sugars, butter….
and heavy cream into a medium-sized sauce pan.
Boil for 5 minutes, stirring constantly, and remove from heat. Add your vanilla and pecans (optional…I didn’t add any nuts).
Let the cake cool slightly. Cut into squares, plate and drizzle the warm caramel sauce over the cake. If the caramel sauce has cooled just pop in the microwave (in a microwave safe bowl) to heat.
When you are done with the caramel sauce, be sure to refrigerate until you are ready to use it again. Just re-warm in microwave.
Like I said, it’s not a pretty cake, but is is plate licking good!
