
Ahhh, Fall is in the air. Well almost. It is still hot during the day, but Mother Nature is teasing us with the cool Fall nights.
With autumn comes the delicious harvest of all the apples. If you live here in Northern California you are probably familiar with Apple Hill. A great place to go to enjoy deliciously just picked apples and the crisp mountain air.
Here is one tasty and easy apple pie that can be served at any summer BBQ or at the end of a holiday meal. The surprise isn’t that it is easy to prepare, but the buttery sugar goodness that coats the crisp tart apples.

Oh what a surprise, I am using a pre-packaged pie crust. Hey, it always turns out delicious and it certainly is easy. One day I will make my own crust, just not today.

I can cook, I just can’t take great pictures. But you get the gist. Melt the butter in a medium saucepan.

Whisk in flour to form a paste.

Whisk in water, white sugar and brown sugar. Bring to just a boil, then reduce the temperature to a simmer and allow to cook for an additional 2 minutes. Remove from heat.

Peel, slice and core your apples. I use my handy dandy apple/peeler/slicer/corer gizmo. Makes making apple pies a snap.
Place all your apples in the pie shell.

Go slowly here. You don’t want the filling to run over the edges.

Once the sauce has covered the apples, then cover the top with the second sheet of dough.

Cut slits in the top of the pie dough. Brush the melted butter on top.

Sprinkle the top with the cinnamon sugar mixture. Bake the pie on a baking sheet in a preheated 425 degree oven for 15 minutes. Reduce the temperature to 350 degrees F and continue baking for an additional 35 to 45 minutes. If the crust is browning too fast then place a piece of foil over the pie, removing it 5 minutes before the pie is done.
Enjoy warm with a big scoop of vanilla ice cream. You’re going to love it!
