Happy Valentines Day (well almost)!  Trying to stay  healthy with your honey?  This little dish really packs in a lot of flavor with just a touch of heat.

I bought a big bag of tilapia at Costco the other day and I am also trying to eat more healthfully.  I came across this little recipe and it sure is a winner.  Easy to prepare and delicious.  You could pair it with quinoa, brown rice or sautéed veggies.  Your sweetheart will love the heart shaped parchment paper, just tell ’em it was certainly made with love.

Simple ingredients. I did forget to put the sesame oil and grapeseed oil in the picture. I love he flavors of cilantro and ginger!

Put all the ingredients into a small bowl and whisk together.

Fold an 8x11 inch piece of parchment paper (one per fish fillet) in half, then with the folded side to the left, cut a half heart shape out. When you open it up you will get a whole heart <3

Place one tilapia fillet on one side of the heart, salt and pepper, then top with half the mixture.

Tightly crimp the edges by rolling the edges together sealing the paper so the fish will steam.

Bake the fish on a baking shet in a pre-heated 400 degree oven for 25-30 minutes. Remove from oven, let cool for a few minutes then transfer it to your dinner plate.

I think you will really enjoy this simple, yet impressive little dish!  I did end up putting some sliced almonds on top of my fish and I thought that the almonds put it over the edge with deliciousness (is that even a word?).  Enjoy.

Even if you are a beginner cook, you will hit this one out of the ball park. Don't have parchment paper? Just use foil instead. We are going for steaming the fish here, so foil is just fine. But seriously, the parchment paper makes it super cute! I mean who doesn't want to eat a "cute" dinner!??

Ingredients
  • 1 tablespoon fresh gingerroot, peeled and finely chopped
  • 2 green onions (white to pale green only), finely chopped
  • 1 teaspoon chili in garlic sauce or sambal
  • 1 cup finely chopped cilantro
  • 1 tablespoon grapeseed oil OR extra light virgin olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon coconut aminos or soy sauce (I just don't like using soy in my food :} )
  • 1 teaspoon fish sauce (make sure you use this, it really does add a lot of flavor to the dish
  • 2 teaspoons honey
  • 2 tilapia fillets 5-6 ounces each or you can use any other firm-fleshed whitefish
  • 2 8x11 inch parchment paper
Instructions
  1. Preheat oven to 400 degrees.
  2. Combine all topping ingredients into a small bowl, gingerroot to honey). Gently whisk together.
  3. Season fish with salt and pepper.
  4. Place one fillet on each cut-out parchment paper (of course you don't have to cut it into a heart, but it is valentines day :)
  5. Divide the topping equally among both fish fillets.
  6. Crimp the two sides of the parchment paper, sealing it closed and crimping it tightly.
  7. Place on a baking sheet and bake for 25-30 minutes.
  8. Serve with quinoa, brown rice or your choice of vegetables.
