
Maybe we should call this the McCLEAN muffin. This is a very filling and satisfying breakfast that can be made in about 5 minutes. So don’t think you can’t start your day with a healthy breakfast full of fiber and protein, because you can.
Breakfast is the most important meal of the day. Skipping breakfast is a common strategy for losing weight, but not a smart one. Many people believe that they will lose weight if they skip meals, but that just isn’t true; the body expects to be refueled a few times each day — starting with breakfast.
Actually, eating breakfast is good for weight loss. In fact, people who eat breakfast are more likely to maintain a healthy weight.
A healthy breakfast should contain some protein and some fiber. Protein can come from low fat meats, eggs, beans or dairy. Fiber can be found in whole grains, vegetables and fruits. A good example of a healthy breakfast might be something simple like a hard boiled egg, an orange, and a bowl of whole grain cereal with low fat milk.
Stay away from the sugary cereals, syrups, pastries, and white breads because they are digested quickly and will leave you hungry and tired in a couple of hours. Protein and fiber satisfy your hunger and will keep you feeling full until lunch time. So quite frankly, this breakfast sandwich is an excellent choice.

Can you believe these muffins have a whopping 8 grams of fiber and 3 grams of protein for just a mere 120 calories.

Okay, I have to admit I had a really tough time finding low fat cheese that the Eat Clean magazine always talks about. I thought that this cheese would be good with only 50 calories per slice, but it is pretty high in fat at 3.5 grams.


Okay, this method seemed like a good idea. I thought that the eggs would come out looking a little more professional, but it just turned out becoming a mess and I ended up using a smaller skillet and cooking them up omlet style and folding it into fourths when it was done cooking.

Toast your muffin, then I sprayed a little bit of that spray butter onto the muffin. I really couldn’t taste it so I won’t be doing that again, either.


Once the eggs are done then top with a slice of cheese and then the Canadian bacon.

Place on your muffin and you’re good to go with one healthy breakfast. Can you believe only 250 calories and a whopping 24 grams of protein. You go girl!!


Do you know if Laughing Cow Light cheeses are clean? I make a similar breakfast sammie, but use a Laughing Cow Light wedge and I use egg whites and cook them in the microwave in a small ramekin…perfect size for the muffins and really good.

Well, I am certainly not a profesional in this area, but I would have to say yes, it should be a clean eating item. However, I do know that the best choices for cheese in the clean eating department is either feta or goat cheese. When in doubt always look at the label. The fewer items listed in making the product, the better. I hope I have helped you, and best of luck!
