Clean Eating/Huevos Rancheros Scramble


Yummy!  Can you believe all this flavor for a whopping 14 grams of protein and 145 calories.  Breakfast has just become my most favorite meal of the day.

This is obviously not a traditional huevos rancheros style breakfast, but it is much healthier.


No eggs were harmed in this recipe….I promise.  Well, not these eggs anyway.


I have a hard time throwing away egg yolks, so I buy the carton of only whites.  It’s easier, too.


Dice your red onion and cut the tortilla in half.  Keep one half whole (that sounds weird) and cut the other half into small, bite-sized strips.


In the hot pan, soften the tortilla, turning a few times.  Remove from heat and place on your plate.


Reduce heat to medium-high.  Coat pan with cooking spray and add the strips of corn tortillas and red onion.  Saute until both are tender, about 3 minutes or so should do the trick.


Now add in your egg whites and season with salt and pepper.


Top with your favorite salsa.

Easy AND delicious….and don’t forget low cal, too.  Enjoy.

Serves 1

1 small round corn tortilla (organic preferably)
1/2 cup of egg whites
Butter flavor Pam spray
2 tablespoons finely chopped red onion
2 tablespoons of your favorite salsa

Cut the tortilla in half.  Soften in pan on high heat.  Remove from heat and put on plate.  Reduce heat to medium high.  Spray pan with cooking spray and add the red onions and the other half of the tortilla, cut into small bite sized pieces.  Once the onions and tortilla have softened, add the egg whites.  Season with salt and pepper.  When cooked through place eggs on plate on top of the tortilla half.  Top with salsa.  Serves 1 delicious and nutritious breakfast.
