Lemon Snowball Cookies.  Or maybe they should be called lemon meltaways. 

Either way, these are so yummy.  Just the right size to have with a cup of tea on a cold winter night or a glass of lemonade on a cool summer day.

They are so delicious and the subtle hint of lemon really shines through.  These would also be pretty to give as a gift.  They have the little dessert boxes that you can buy at Michaels with the cellophane window.  Surprise someone today with a special gift from your kitchen!

Get all your ingredients together.  It isn't hard finding the lemon extract.  I found mine at HomeGoods, my most favorite store ever!!

Cream together your butter (at room temp) and sugar, then add in the lemon zest and flour.

Your dough should be nice and stiff.  Using a small scoop or a tablespoon measure for the balls, then place on a non-stick cookie sheet.  They really don't spread out too much so you can put them pretty close together.

While the cookies are baking put about 1 1/2 cups of powder sugar in a shallow dish, add the zest of one lemon to the sugar.  Using your hands rub the sugar in with the lemon zest.  This will release the oils from the zest.

Allow the cookies to cool for about 5 minutes, then roll each cookie into the lemon infused powdered sugar.  The sugar will melt a little.  My mouth is watering right now :_)  Now they are ready to be served.  Enjoy.

A delicious and light little shortbread type of cookie. Great for gift giving or just enjoying by yourself.

Serves: 3 dozen
Ingredients
  • 1 cup butter, at room temperature
  • ¼ teaspoon salt*
  • ½ cup granulated sugar
  • ½ teaspoon lemon extract
  • 2 cups all purpose flour
  • *If you are using salted butter, you can omit the salt
  • 1½ cups powdered sugar
  • zest of one lemon
Instructions
  1. Preheat oven to 350 degrees. In a medium-sized bowl, beat together the butter and sugar until light and fluffy. Then add in the lemon zest. Add the flour, mixing until well combined.
  2. Form the dough into 1" balls; using about a tablespoon for each cookie. Place the balls on an ungreased baking sheet.
  3. Bake the cookies for 12 to 15 minutes. They should be light brown on the bottom, and feel set on top.
  4. Remove the cookies from the oven. Let them cool on the baking sheet for about 3 to 5 minutes; they are very fragile when hot!
  5. Roll the warm cookies into the powder sugar infused with lemon zest. Enjoy.
