This recipe came from my mom. She used to make it all the time when I was a kid. I do believe that this was my most favorite dessert during summer.
I grew up in rural Colorado where if you weren’t a farmer, you were a teacher. So you can imagine all the amazing road side produce stands that were open throughout the summer. I guess now a days those stands are called “farmers markets”….I grew up on Rocky Ford cantaloupes, fresh sweet corn, homegrown tomatoes and sweet, succulent and fresh peaches.
This dessert requires no oven, which is great during the dog days of summer. Of course you can make your own graham cracker crust if you so desire, but for the sake of being easy and fast, I used a store-bought pie crust.

What’s not to like?

In a medium-sized sauce pan melt the marshmallows and milk together. You need to keep your eye on this at all times, the marshmallows melt quickly. Use a medium heat and stir constantly.
Remove from heat and set aside.

Whip the cream with an electric mixer using the whisk attachment. Once the cream is nice and fluffy, add in the marshmallow mixture. Give it a good whirl to incorporate.

Dice those yummy little peaches into bite-sized cubes.

Gently fold in the peaches to the cream mixture.

Fill the graham cracker crust pie shell with the peach filling.
Yes folks, that’s it. So easy, light and delicious. I hope this one becomes your favorite summertime dessert, too.

i just came across your blog.. and i absolutely love it! great simple recipes. I mentioned you on one of my most recent posts here: http://spinachandspice.wordpress.com/2011/07/11/concentrate-on-calcium/ because we made one of the same clean eating recipes.
Thank you for this recipe! My mom made this for us too in the summer and I have been looking for the scrap of paper she had the recipe written on, but could not find it. Not having it made me feel kind of like I was missing a part of her.
Guess what we’re having for dessert tonight!! Thanks Missy!
