Orange & Cranberry Quinoa with Chicken


This was one heck of a busy holiday season for me.  Not only was I busy but I also over indulged in all the holiday foods.  I kind of have a food hangover!  Not fun.

I am going to get a head start on eating healthy again, and this is the perfect meal to start with.  You can omit the chicken or turkey and use this as a side dish to your next meal.

I think this is what I am having for lunch today!!  Yummmmmmmmm.


All the fresh ingredients.  It was not necessary for me to soak my dried cranberries since they were nice and plump when I purchased them.


Make sure the liquids are boiling before you add the quinoa.


While the quinoa is cooking, add the remaining ingredients into a bowl.


Once the quinoa has soaked up all the liquids then fluff it with a fork and toss it into the bowl with the remaining ingredients.

Orange & Cranberry Quinoa with Chicken

1 1/4 cup low sodium chicken broth
1/4 cup freshly squeezed orange juice
3/4 cup quinoa
1/3 cup dried cranberries
1/4 cup lightly toasted pecans (You can also use pine nuts or walnuts)
1/8 cup parsley, chopped
1 cup cubed (cooked) chicken or turkey

1. in a 3 qt saucepan, bring broth to a boil, add juice from orange and quinoa, reduce heat to low, cover and cook until quinoa has absorbed all the liquid, approx 10-15 minutes. full quinoa with fork before adding other ingredients.

2. Rough chop the cranberries.

3. place pecans, or your choice of nut, in a small nonstick skillet over medium-high heat and cook for 5 minutes, stirring or tossing frequently, until pecans are fragrant and slightly golden.

4. Gently stir cranberries, pecans, parsley and chicken or turkey breast into quinoa.
